I know it’s still January and I said that I needed to start eat healthy again this month. And this Nutella Cake my love Luca made is definitely not healthy! But it’s so damn good that I really don’t care and (obviously) ate it anyway.
3 Days after I gave birth mid October I already got back to my pre-pregnancy weight! That I couldn’t eat any sugar during my pregnancy and therefore lost weight had something to do with that 😉 . But as I was able to eat sugar again once Samuele was born, I gained weight in the 2 months after. Since the beginning of January I’m pretty much on my normal weight again. I do want to keep it this way but I don’t want to be on a diet either. And yes I do like practically anything sweet!! So I thought I would be best if I don’t eat cakes, cookies, chips, chocolate, etc etc during the week and allow myself to some treats during the weekends. That works best for me. It helps not touching anything during the week days when I know I can have some guilty pleasures in the weekend! Nutella is my absolute number one when it comes to guilty pleasures so I’m always excited when Luca is making his de-li-ci-ous Nutella Cake!
160 g // 1 1/4 cup all-purpose flour
100 g // 1/2 cup sugar
80 g // 1/3 cup butter
100 g // 1 2/3 grated coconut
100 g // 1/3 cup Nutella
1/2 tbsp baking powder
pinch of salt
250 g // 1 cup + 1 tbsp mascarpone
6 tbsp Nutella
handful grated coconut
Preheat oven to 180ºC / 350ºF.
Grease and flour a 18 cm / 7-inch springform pan.
In a large bowl beat butter and sugar using an electric mixer. Add eggs and mix until smooth. Now add the (sieved) flour and combine. Add coconut and mix well. Add Nutella and combine until smooth. Now add the baking powder and salt and mix well.
Pour batter into the springform pan. Bake for 30-35 minutes or until wooden pick inserted in center comes out clean. Cool for 30 minutes.
In the meantime make the frosting/filling by combining mascarpone and Nutella using a whisk.
After the cake is cooled make sure the top is flat. Cut the cake horizontally in half. Add a bit of frosting on the lower layer. Place the top layer on top. Cover the whole cake (so on top and the sides) with frosting.
Of course you can decorate the top of the cake anyway you like. Sprinkle a bit of grated coconut on the sides.
