MALLOREDDUS WITH BROCCOLI

Let me start by saying that I’m actually not a big fan of broccoli.
But, at the same time I know it’s such a fabulous vegetable for your health. It’s not only high in vitamin C and dietary fiber, it also contains multiple nutrients with potent anti-cancer properties! It’s pretty obvious that this vegetable must be eaten regularly and so I do. But I’m always trying to eat it in a way that I really enjoy the dish and don’t just eat it because it’s healthy for you. Eating should be fun and tasty….at all times!!!
Now that the broccoli season started I made my favorite broccoli dish: Malloreddus with Broccoli.
It’s a recipe I learned to make (and eat) during my year in Rome. And although I was very much skeptical in the beginning and totally not looking forward to eat it, I was hooked pretty much immediately. It’s such a tasteful dish that I’ve eaten it so many times ever since. And not least it’s extremely simple to prepare. It’s the perfect way to add broccoli to the weekly menu. As it is better for your diet to eat pasta for lunch and not for dinner, I often make it for lunch and bring it to work! Or at least I did before my maternity leave of course… But lunch or dinner, it’s delicious either way!
Malloreddus with Broccoli
Malloreddus with Broccoli
serves 2

150 g // 3/4 cup (whole wheat) malloreddus pasta, also called gnocchi sardi.
1 broccoli
1 garlic clove
olive oil extra vergine
salt

Bring a large pan of water to boil. Cut off the florets from the broccoli.
Once the water boils add salt and then add the broccoli florets. Let it boil for 20 minutes. Cut the garlic clove in half. Heat a bit of olive oil in a skillet and rub the bottom of the skillet with the cut edge of the clove. Add the broccoli in the skillet and mash it using a fork. Add a tbsp of boiled water to make sure it the broccoli doesn’t dry out. In the pan where you boiled the broccoli you add the malloreddus and let it boil 2 minutes less than written on the package. Drain the malloreddus and add it to the skillet. Mix well with the broccoli and serve.
