FiordiFrutta from the family business Rigoni di Asiago makes delicious marmalade completely organic without any added sugars! To sweeten it they use organic apple juice instead. Besides, the preparation takes place at low temperatures (between 30ºC and 35ºC) so the taste of fresh fruit is well-preserved. This way of preparing the marmalade is their own innovation and it’s makes this marmalade really special, healthy and so tasty! Even those who have a gluten intolerance can eat it as it is also gluten-free!! In Italy the marmalade of FiordiFrutta is already well-known. Now they are selling it also in my favorite supermarket in The Netherlands and hopefully many more people from other countries have the possibility to try out this marmalade. Because you can use it in so many ways. Think of a delicious Italian crostata, some small marmalade biscuits or maybe in a fruit smoothie. But it’s also perfect savory dishes. Think of a wonderful cheese platter. I’ve chosen to give you two ideas of how to use it. An appetizer and a dessert. I have tried and used 3 different flavors: strawberry/wild strawberry, wild black blueberry and bitter orange. And even though I’m not a fan of bitter, even the bitter orange flavor is really good!
Crostini with marmalade and spicy cheese
4 slices of whole wheat bread
FiordiFrutta wild blackberry & bitter orange
Spicy cheese – I used Auricchio (grated)
Strawberry Coconut Cake Roll
60 g // 1/2 cup flour
20 g // 1 big tbsp cornstarch (maizena)
125 g // 2/3 cup sugar
pinch of salt
FiordiFrutta strawberry/wild strawberry
Fresh strawberries (cut in pieces)
Preheat the oven to 175ºC. Place parchment paper on an oven tray.
Mix with an electric mixer the sugar with the eggs and a pinch of salt for 10 minutes. Add the flour and mix well with a wooden spoon. Spread the batter on the oven tray with a spatula. Bake in the oven for 20 minutes.
Place a kitchen towel on the countertop/table and sprinkle some powdered sugar on top of it. Place the cake on it. When still warm roll the cake in the towel and let it cool down this way for 15 minutes. Then unroll the towel.
Now spread a layer of marmalade on top of the cake and spread some grated coconut on top of the marmalade. Roll the cake and sprinkle some powdered sugar and strawberry pieces on top of it.
