Happy Valentine’s Day!!!
Today I feel totally loved. My valentine made me some delicious chocolate hazelnut cookies! What a big surprise… It’s the first time he made cookies and they turned out so good! Light and crispy, simply perfect. I obviously felt the need to share it with you. What better way to spread some love today, right?They’re very easy to make, so even after a busy day you can make these love cookies.
We actually never really celebrate Valentine’s Day. Not in a big way at least. But my valentine never forgets the day either. Some flowers, some chocolates or a sweet note. I know it might sound little original, but it’s just the fact he thinks about it, that I find so sweet. Since we met we decided to never go out for dinner on Valentine’s Day as we don’t enjoy crowded restaurants with poor service and a huge bill afterwards which is normally the case on these occasions. As we also celebrate our anniversary in the beginning of this month he normally makes me a special dinner at home. This year it was extremely good: fresh tagliatelle with scallops and shrimps in a sauce of cherry tomatoes, white wine and parsley and after that baked prawns with garlic and parsley. Extraordinary!!!
And today some of my favorite chocolates and home-made love cookies. Yes, I got pampered!!
How do you celebrate your Valentine’s Day?
About 2 dozen (24) cookies
250 g // 2 cups flour
100 g // 1/2 cup (slightly less) butter (room temperature)
100 g // 1 cup icing sugar
2 egg yolks
1 tbsp cacao
50 g // 1/3 cup chopped hazelnuts
lemon zest of 1/2 lemon
pinch of salt
Mix the flour with the cacao and sieve it into a mixing bowl. Then add the butter and mix by hand. (You can obviously also use the electric mixer if you prefer). Add the 2 egg yolks and mix well. Now add the icing sugar, salt, chopped hazelnuts and lemon zest and start mixing again until it becomes homogeneous. Form it into a ball. Wrap it in cling film and put into the fridge for at least 2 hours.
Preheat the oven to 180ºC (350ºF).
Roll out the dough to the desired thickness and use a heart-shaped cookie cutter to cut out these love cookies. Put them on a baking tray and bake the cookies in the oven for 20 minutes until golden. Leave to cool completely.
