STUFFED CHICKEN BREAST

This week is not one of my best ones…it has been days now that I’m at home with the flu. I tried to go to work Monday but that wasn’t the greatest idea…The fever forced me to go home. So now I’m still home hoping to feel better as soon as possible. I’m almost never sick so when I am, I find it extremely enjoying. The only “good” part of it all is that I don’t need to face the trains this week ;).
In the mean time I’m starting to infect my love as well…he’s already complaining of headache, feeling cold and a sore throat. Oops…
So while I’m on the couch with some blankets and a cup of tea with honey I’m hoping that my love will make my favorite chicken dish tonight. If doesn’t feel too ill tonight of course! It’s his own creation and I love it. Stuffed chicken breast with bacon and dried prunes. Absolutely DE.LI.CIOUS!! It’s so simple, but so good and full of taste! It’s also perfect for those busy days when you want to make something good and healthy but you don’t have any time whatsoever. This dish is ready in less than 20 minutes!!
Just serve with a simple salad. However, if you have more time, I love to eat these stuffed chicken breast with oven baked potatoes!

Stuffed Chicken Breast
serves 4

8 chicken breasts / fillets
8 slices bacon (uncooked)
8 dried pitted prunes
glass of dry white wine
olive oil extra vergine

Place a slice of bacon and a prune on each chicken breast (fillet) and roll it up securing with a toothpick.
Heat a bit of olive oil in a skillet over medium heat and bake the stuffed chicken breast rolls until golden brown. Deglaze with white wine. Leave on the stove over low heat until the alcohol has evaporated.
