When it’s winter time and cold and rainy outside (so not today as it is very sunny and ‘springish’ outside), I love to make soups for dinner! Even though I didn’t like soups at all when I was young (my mom was pretty much shocked to hear I love soups, so that says it all…) I adore it since a couple of years and eat it at least once a week. It’s the most easy thing to prepare and very healthy so that’s a perfect match if you ask me! Nobody who works full-time has hours of time to make dinner during the week, right?
Therefore this recipe of Healthy Pea Soup or Passato di Piselli is absolutely fabulous… You have it ready in no-time and it’s delicious and healthy of course.
- 300 gr peas
- 1 stock cube
- Put the peas in a large stock pot and add 1 lt of water.
- Add the stock cube and let it boil for 15 minutes.
- Take a blender and puree the soup.
- Add a bit of pepper and some basil.
This pea soup is perfect to eat with the broccoli muffins I posted last week!!
